Homemade Elderberry Syrup and Tea

 ELDERBERRY SYRUP

Can be used medicinally or on pancakes/waffles.
Not for children under 2.

Servings: 2 Cups

INGREDIENTS:
3 1/2 C water
2/3 C black elderberries (dried, or 1/13 C fresh or frozen)
2 Tbsp ginger (grated)
1 tsp Cinnamon
1/2 tsp Ground Cloves
1 C Raw Honey

DIRECTIONS:
1. Pour the water into a medium saucepan & add the elderberries, ginger, cinnamon, and cloves.
2. Bring to a boil and then cover and reduce to a simmer for about 45-60 min. until the liquid has reduced by almost half.
3. Remover from heat and let cool until it is cool enough to be handled.
4. Mash the berries carefully using a spoon or other flat utensil.
5. Pour through a strainer into a glass jar or bowl.
6. Discard the elderberries and let the liquid cool to lukewarm (or eat the elderberries!)
7.When it is no longer hot, add the nosy and stir well.
8. When the honey is well mixed into the elderberry mixture, pour the syrup into a mason jar or 16 oz glass bottle of some kind.

Store in fridge and take daily during the week (not the weekends) for immune boosting properties.

CAN BE FROZEN for later
LASTS ABOUT 2 WEEKS in fridge
If air-tight-sealed, can last A FEW MONTHS in fridge
Can FREEZE IN ICE-CUBE TRAYS and defrost small amounts when needed.
Can CAN ELDERBERRY JUICE CONCENTRATE (prior to adding honey) to store for several months.

INSTAPOT OPTION:
1. Put all ingredients, except honey, in pot, seal lid, and set manually for 9 min on high pressure.
2. Vent pressure and strain.
3. When cooled to room temperature, stir in the honey.
4. Pour into 16 oz mason jar.

DOSE:
1/2-1 tsp for kids
1/2-1 Tbsp for adults.

If the Flu strikes, take the normal dose every 2-3 hours instead of once a day until symptoms disappear.

ELDERBERRY TEA

INGREDIENTS:
16 oz Filtered Water
2 Tbsp Dried Elderberries
1/4 tsp Cinnamon Powder
1/2 tsp Turmeric Powder
1 tspRaw Honey (optional)

DIRECTIONS:
Put Water and Elderberries into a small saucepan.
Add Turmeric and Cinnamon.
Bring to a boil, reduce heat, and simmer for about 15 min. This helps brings out the beneficial properties of the elderberries.
Remover from heat and let cool for about 5 min.
Strain through a fine mesh strainer and pour into individual mugs.
Stir in Honey (to taste)
